White Bean and Turnip Soup

With all of this lovely cold spring weather I decided to make some soup to help us stay warm.
photo 2It was so yummy! Not to brag about it, but when I make a soup and everyone around here eats it, I feel inclined to brag. I am going to share the recipe but be mindful, you may need adjust the recipe because I am guessing the true amounts.

4 cups Chicken Broth (I use my homemade chicken broth, you can also use vegetable broth)

2 cans Northern Beans (be sure to rinse beans off before adding into pot)

5 Carrots (peeled and sliced)

1 cup green peas

1 large turnip (cut up into bite sized chunks)

2 cups spinach (fresh)

1 medium Onion (chopped)

1/2 Red onion (chopped)

2 cloves Garlic (chopped)

2 cups Chicken (optional and you can shred it or cut into small pieces)

2 teaspoons turmeric

sea salt

Trader Joe’s TJ’s Everyday Seasoning

Put everything except the spinach, and TJ’s everyday seasoning, into a large pot. Cook on medium heat until turnips are tender. Stir in spinach and season to taste. You could also put this into a slow cooker.
